Diabetic Pecan Pie

  • 2 tablespoons butter

  • 2 large eggs

  • 1 cup light syrup

  • 1/8 teaspoon salt

  • 1/2 cup sugar substitute (Splenda or other)

  • 1 tablespoon flour

  • 1 teaspoon vanilla extract

  • 1 1/2 cup pecan halves

  • 1 unbaked 9" pie shell

  • 1/2 tablespoon milk

  1. Melt butter and put it to the side to cool down. Add in order, eggs, syrup, salt, sugar substitute, flour, vanilla extract, and butter.

  2. Beat the mixture on slow speed until blended smoothly. Stir in pecans and make sure they are coated with mixture. Pour into pie shell.

  3. Brush crust rim with milk. Bake at 350 for about 45 min. to an hour.

Sounds great but 63 carbs doesn't sound diabetic. How 'bout eliminating the pie shell and make it just a casserole dessert?

I am so glad that someone came up with a recipe for a pecan pie for diabetics, I love pecan pie, as a matter of fact I love sweets period. Thanks so much

Excellent. I doubled the recipe for a dinner party and we had a couple of cancellations that left us with a lot of leftovers. It is even better the next day!

While I appreciate that this recipe tries to reduce carbs by using a sugar substitute, I have to disagree with calling it "Diabetic Pecan Pie."

More than 60 grams of carbs in one slice?! On many meal plans, that's the entire carb count for the entire meal. I think there are other treats that are better suited for diabetics. Just my two cents.
