Lean Mean Turkey Chili

Cubed zucchini adds bulk and flavor to this 'Lean and Mean' turkey chili.

Lean Mean Turkey Chili
  • 1 Tbsp. (1 1/2 oz.) olive oil

  • 2 c. onions - finely chopped

  • 3 cloves of garlic - minced

  • 2 lbs. ground lean turkey(or chicken breast)

  • 2 tsp. oregano

  • 1 tsp. thyme

  • 2 tsp. basil

  • 1/4 tsp. sea salt

  • 2 - 3 Tbsp. chili powder

  • 1 c. cubed zucchini

  • 1 (28 oz.) can diced tomatoes

  • 1 c. tomato sauce

  • 3/4 c. water

  • 2 scoops (10g) PGX

  • 1 (12oz.) can kidney beans

  • 1 (12oz.) can black beans

  • 2 c. celery - finely chopped

  • 1 c. fresh parsley - finely chopped

  1. In large saucepan, heat 1 Tbsp. (1/2 oz.) of the oil over medium heat; saute turkey, breaking up, until no longer pink, about 8 minutes. Drain off fat; transfer turkey to bowl.

  2. In same saucepan, cook onion, garlic, oregano, thyme, basil and chili powder until softened, about 3 minutes. Stir in tomato sauce; cook for 1 minute.

  3. Return turkey to pan. Add tomatoes, black beans, zucchini, kidney beans, celery, water and PGX. Reduce heat and simmer for 40 minutes.

I liked this too, but for some reason my BS shot up with this. I don't know what is making my BS rise, anything I eat seems to do it. I am going to the nutritionist today. I know I am not eating anything I shouldn't. My BS is 135 in the morning and back to 201+ at night.
