Orzo Salad

  • 1 box of Orzo

  • 2 large Cuccumbers

  • 4 large Tomatoes

  • 2 large Green Pepper

  • (Optional - 2 stalks of Celery)

  • Low fat Italian Salad Dressing or can be made with balsamic Vinegar and Olive oil dressing.

  1. Cook Orzo and set aside in large mixing bowl

  2. Peel and cube Cuccumbers

  3. Cut up Green Peppers into small pieces

  4. Cut Tomatos inot small pieces

  5. If you like crispy put in a couple of stalks of celery sliced into small pieces

  6. Mix all of the vegetables in a large bowl and add either the Italian Low Fat dressing or the Balsamic Vinegar/Olive Oil dressing

  7. Serve in small side dishes - about 1/2 cup per serving
