Chicken Salad

  • Chicken - dark and white meat - no fat or skin, i usually cook the chicken the day before and drain and cut in cubes

  • 2 small granny smith apples

  • 2 cups of white and red grapes

  • 1/2 pound of bacon - cooked crispy and drained, blotted and cut up in small pieces.

  • 1/2 cup mayo - low fat (can use more if you like moist salad.

  1. cook and cube the chicken - day before if possible

  2. slice grapes in half

  3. core and dice apples

  4. make the base salad - lettuce mix or lettuce cuke, celery - no tomatos (sorry you tomato lovers not this time)

  5. Mix chicken, apples, bacon and grapes withthe mayo

  6. Spoon on top of individual; servings of salad mix. tastes great.
