mixed vegetable beef soup
  • 1lb ground beef

  • 16 oz mixed veggies

  • 6 cups v 8 tomato juice

  1. fry 1 pound ground beef drain off grease

  2. then dump mixed veggies in and 6 cups of v 8 tomatoe juice

  3. simmer 10 min on high

  4. cover partly with lid so it doesn't run over

  5. serve or refrigerate.

  6. enjoy

I agree about low salt.

I would also replace red meats with ground turkey.
This way you get added health benefits!

Also, how about adding some chopped celery and onions? bell peppers too?

Wow, I wouldn't use V8. Even the low sodium products is WAY to high for anyone to use. Tastes like you're sucking on a salt lick. Yech! But I would use my own home made tomato sauce, where I can control what goes into it. I don't use any prepackaged foods. Nothing in them is good for you, whether you're diabetic or not.

I have gotten away from red meat but it would be good with the venicin I have in my freezer! I use lots of onions & mushrooms in the crock pot !

Don't know what kind of stove you use, but my gas stove WILL NOT "simmer" on high! Otherwise, sounds delicious and very easy.

The carb count on the veggies was based on a standard 16 oz bag of mixed vegetables.

On the nutritional information it says 11 servings.
That would be 1.45 oz of beef and veggies and 4.36 oz of
V8 juice. Probably close to a 1 cup serving. 4.6 grams of carbs
in the veggie serving and approx 5.4 on the V8 juice would be
11 grams of carbs in a 1 cup serving, give or take a fraction of a gram

I am sorry but I don't see any "serving size" for this soup. How can you say it contains 11g of carbs without giving a serving size? Also, if you have mixed veggies in the soup, I am going to guess those veggies contain or possibly contain corn. Hmmm, even in small amounts I would think corn would add substantially to the carb count. Regular V8 juice has 10g of carbs to an 8 oz serving. Serving size does matter —- it matters a lot to diabetics who want to control their disease and normalize their blood sugars through counting carbohydrates. Thanks!
