Herb-Marinated Roast

Ingredients
  • Marinade :

  • 1/2 cup dry white wine

  • 1/4 cup lemon juice

  • 1 (8oz.) can tomato sauce

  • 1 Tbsp prepared mustard

  • 1 tsp dried thyme leaves

  • 1/4 tsp dried oregano

  • 1/4 tsp pepper

  • Roast:

  • 1 (3lb.) sirloin tip roast

Directions
  1. In a small bowl, combine all marinade ingredients. Place roast in a large non-metal bowl or plastic bag; pour marinade over roast. Cover bowl or seal bag; marinade roast in refrigerator 8 hours or overnight, turning roast occasionally.

  2. Heat oven to 325 drgrees. Place roast and marinade in an ungreased roasting pan. Inseart meat thermometer. Cover; bake at 325 drgrees for 1 1/2 hours to 2 hours or until meat thermometer registers 150 F, basting occasionally with marinade.

  3. Uncover; let stand 15 minutes before slicing. Skim fat from marinade; serve marinade with roast. Makes 10 servings.
