Strawberry Spinach Salad

A fresh crisp salad for any gathering!

Strawberry Spinach Salad
Ingredients
  • 12 Cups Fresh bite-sized pieces spinach

  • 1 Pint (2 Cups) strawberries, sliced

  • 2/3 Cup sliced green onion

  • 2 Cans (11 ounces each) mandarin orange segments, drained

  • 1/4 cup pine nuts

  • Orange Honey Dressing

  • 1/4 Cup Orange juice

  • 1/4 Cup honey

  • 2 Tablespoons Olive oil

  • 2 teaspoons Dijon Mustard

Directions
  1. Prepare orange honey dressing; put all ingredients in tightly covered container and shake.

  2. Toss dressing and remaining ingredients except pine nuts. Sprinkle with pine nuts.

Picture does not match the ingredients. Picture shows almonds, not pine nuts. Also, ricotta or other fish cheese is shown, but not in ingredients list. 12 cups of spinach, how much does that weigh?

I need help with ever ones in put I have not been hungry for a couple of days and being a diabetic, I know I am suppose to eat some thing but I am not please help me ever one!!!!

Just in time for the summer. I love spinach and berries boy oh boy am I gonna have some fun with this. I almost forgot to tell you that you can can just use the the little oranges that is easy to peel for kids. They work great.

You can use agave nectar instead of honey if you like, or just use some stevia. It is a sweetener that is needed, so use what works for you.

This is great and if you replace the orange slices with blueberries it makes an awesome summer salad. Then I also replace the OJ in the dressing with lime or lemon juice and it tastes great. I love this salad.
