1 tsp Chili Powder
1/2 tsp Paprika
3 to 3 1/2 pounds cut up broiler Fryer Chicken
1 C. Whole Kernel Corn
2/3 C. Chopped Red Onion
1/4 C. Chopper Fresh Cilantro
3 Tablespoons Lime Juice
1Tablespoons Olive Oil
1 Medium Avocado, cut into bite size pieces
1 Clove Garlic, finely chopped
1 Can (15 ounce) black beans, rinsed and drained
Skin Chicken pieces.
Prepare Southwest Relish. Mix Chili powder and paprika; sprinkle over Chicken.
Heat coals or gas grill. Cover and grill chicken, 5 to 6 inches from medium heat for 15 minutes; turn chicken. Cover and grill 20 to 40 minutes longer, turning occasionally, until juice is no longer pink when center of thickest pieces are cut.
Mix all ingredients for relish. Cover and refrigerate at least 1 hour to blend flavor.
Serve chicken with relish when chicken is done cooking.
