Waldorf Salad

Chicken, apples, grapes, celery and walnuts combined to make a crunchy and flavorful salad perfect for lunch.

Waldorf Salad
  • Dressing:

  • 1/4 C. Plain yogurt

  • 1/4 C. Low-fat mayonnaise

  • 1 tsp Lemon juice

  • 1 pinch Nutmeg

  • Salad:

  • 1 C. Chopped apple

  • 1/4 C. Chopped celery

  • 1 TBS Chopped dried cranberry

  • 1 TBS Chopped walnuts

  1. Whisk dressing ingredients in a large bowl.

  2. Combined salad ingredients and toss with dressing. Chill for 30 minutes.

It appears to be a great take on a Waldorf salad. I always used grapes. I always thought it is too Carb / Fat heavy.

I haven't tried with cranberries but I usually use grapes in it. I hadn't used mjayo though so might check calories and salt to see which is best,

This is a nice quick salad…i used a tsp of local honey instead of the splenda…i know it's more carbs but the flavor is wonderful and the local honey builds the immune system.

what motivates you to excersize. I have a hard time dealing with fatigue. It hits me like a ton of bricks. And I do not have any motivation to exercize. I keep telling myself i will go for a walk but i don,t.

why put sugar or splenda in this recipe? i have made waldorf salad before and i use non fat mayo and a little mrs dash and all of the other things above and it was delicious i also add grapes
