Summer Melon Salad with Orange Mint Dressing

Summer is coming and that means melons, melons, and more melons! Get your fill with this incredible summer melon salad.

Summer Melon Salad with Orange Mint Dressing
Ingredients
  • 3 Packets Splenda Essentials with B Vitamins

  • 1 TBSP Lemon Juice

  • 1/4 C. Orange Juice

  • 1 TBSP Chopped fresh mint

  • 1/8 tsp. Salt

  • 1/8 tsp. Black pepper

  • 2 tsp. Light Olive Oil

  • 1/2C. Chopped Watermelon

  • 1/4 C. Chopped Cantaloupe

  • 1/4 C. Chopped Honeydew

  • 1/4 C. Chopped dried Pineapple

Directions
  1. Whisk dressing ingredients together in a large bowl. Add fruit and toss gently.

  2. Refrierate for 30 minutes. Serve chilled

I for one, would not use this recipe because the sugar content is 21 g's and the carbs are 24 g's. That in my book is way too much for people with diabetes. Sorry, but it sounds great.

with the exception of the splenda, it sounds good…I cannot use or eat splenda..I would leave it out as I think the melons would be sweet and tasty enough without it…living in Arizona, i can use this recipe all year..

Wonderful fruits, could eat melons everyday. I used half the spend a and it was sweet enough for me. It helped balance the lemon juice and orange juice so the taste was not so sharpe

Wii as bn diagnosed wit diabetes need 2 watch our in take sugars, carbohydrates, sodium is their anyway u could seriously think of our health?

I do wonder with the orange juice why you would need the extra sweetness of the Splenda packets. Orange juice should make it sweet enough I would think. Or how about just adding chopped fresh mint leaves to the melon salad. 21 grams of sugar is pretty high and think that could be cut way back.
