Low Carb Muffins

With only 2g net carbs, you can enjoy these moist, delicious muffins often.

Low Carb Muffins
Ingredients
  • 2 cups of atkins baking mix

  • 3 tsp baking powder

  • 1/3 cup granular sweetener

  • 2 tbsp salted butter

  • 2 eggs

  • 1 cup sour cream

  • * add blueberries if desired

Directions
  1. Pre-heat oven to 350.

  2. Blend all dry ingredients together in large mixing bowl. Then add wet ingredients with spoon or spatula and mix thoroughly.

  3. Lightly coat mini muffin tins with non-stick vegatable oil spray or add paper mini muffin cups

  4. Spoon dough mixture into muffin tins and bake for 18-22 minutes or until done add blueberries if desired but remember to add the net carbs.

this may be a little late but Atkins baking mix is not actually something you can buy like bisqucik. It is a recipe go to the akin's website and you can find it.

I like this recipe because you can add fruit or nuts, but the carb count is 4 in a full size muffin…keep that in mind.

I use almond flour for a lot of things with baking. I tried baking with soy protein and didnt care for it. Soy protein can be found on amazon or vitamin stores (gnc etc.). I got my almond flour from amazon. Amazon also has gluten free flours.

Try this homemade baking mix instead of the commercial mix for low carb recipes.

Prep Time: 5 minutes

Total Time: 5 minutes

Ingredients:
•1 cup soy flour
•2 cups soy protein isolate
•2 Tablespoons baking soda
•1 teaspoon salt
•2 Tablespoons Splenda

Preparation:

Sift soy flour, soy protein isolate, baking soda, salt, and Splenda. Store in an airtight container in a cool, dark place. Use as you would the commercial Atkins Bake Mix.

Yield: about 3-1/4 cups

I felt guilty only copying the chocolate recipes, so I thought I'd try some muffins. since I bought cupcake muffin papers.
