A zesty breakfast all wrapped up and ready to go in this tasty all-in-one meal.

Scrambled Morning Wrap
  • 2 cups sliced fresh mushrooms

  • 1 green pepper, finely chopped

  • 2 tsp. olive oil

  • 1 cup cholesterol-free egg product

  • 1/4 tsp. black pepper

  • 1/2 cup Salsa

  • 4 flour tortillas (8 inch)

  1. Cook and stir vegetables in hot oil in large skillet on medium heat 3 to 4 min. or until peppers are crisp-tender.

  2. Add egg product and black pepper; mix well. Cook 3 to 5 min. or until set, stirring frequently. Stir in salsa; simmer on low heat 2 min., stirring occasionally.

  3. Spoon onto tortillas; roll up

I think the tortilla would be fine as long as it is in moderation. Also, how about a pita pocket?

Tortillas? Flour? Simple carb… not good for diabetics and those who do not want to become diabetic.

Why not replace the tortillas with cabbage leaves?

Love this recipe. I have made them for years; however, I always added baked potato diced pieces. I do not add the potatoes now that I am Diabetic. Use whole grain tortilla's for even more health benefits. Yum!

There is no evidence that eating cholesterol converts back into cholesterol in the human body. Just scramble two or three whole eggs and forget whatever egg product is. There's no need to remove the tiny bit of cholesterol in an egg. I would use a whole grain wrap for increased fibre. One Tablespoon of olive oil would suffice if a smaller pan is used. This would also be very nice with some flaked fresh-steamed salmon used alone or to complement the eggs. I'd add some chopped fresh parsley or spinach for leafy greens.
