You can’t beat a good meat loaf. Here’s a delicious one that is hearty and satisfying yet has only 7g carbs.

Home Style Meat Loaf
Ingredients
  • 2 lbs. lean ground beef

  • 1 can (8 1/4oz) julienne carrots, drained

  • 1 can (13-1/2 oz.) mushrooms, stems and pieces,drained

  • 1 can (2.8 oz.) French Fried onions, crushed

  • 1/2 cup egg substitute

  • 1/2 tsp. black pepper

  • 3 TBSP. Ketchup

Directions
  1. Pre-heat the oven to 350 degress, Coat a 5x9 loaf pan with nonstick spray. In a large bowl combined the ground beef, carrots, mushrooms, onions, egg substitute and the pepper; mix well. Place in the loaf pan and spread the ketchup evenly over the top. Bake for 1-1/4 to 1-1/2 hours. Allow it to set for 5 minutes. Pour off the excess liquid,if any, then slice and serve.

SO I USE TOMATO
SAUCE OR CRUSHED TATOES!
IF YOU WANT IT SWEET LIKE KETSUP
AD A LITTLE BULK SPLENDA!! I ALSO AD CHOPPED CELERY AND FRESH GARLIC! DELICIOUS!

Finally, a recipe that will allow me to stay on my wheat-free diet and still has very respectable nutritional numbers (if they're accurate). Most of the recipes on this site sound good, but I have serious doubts about the nutrition facts of most of them, but this one, I will most definitely try! Sounds tasty.

This is something to try when the usual meatloaf is too boring. I liked the mushrooms, but not wild about the carrots.

My wife, Linda, throws in the leftovers from the refreg + bread crumbs, or just cutup bread chunks! I grewup on "streteched meatloaf" during the 50s and 60s with my folks in Pennnyslvania for we had to stretch that dollar back then! Grandpa Bill
