Dijon Scallops

Ingredients
  • 2 tsp canola oil

  • 3/4 lb scallops

  • 1/2 cup dry sherry

  • 2 Tbsp Dijon mustard

  • 1 Tbsp heavy cream

  • 2 Tbsp chopped chives

  • Salt and freshly ground black pepper

Directions
  1. Heat oil in a medium-size skillet. Add scallops to pan and sauté 1 minute per side. Remove scallops to a dish. Add sherry to pan and simmer 30 seconds. Stir in mustard and cream. Mix well.

  2. Return scallops to pan for 30 seconds. Add salt and pepper to taste. Sprinkle chives on top.

I found what looks like a similar recipe online and here were the directions that accompanied that one:

1. Rinse, drain and pat dry scallops.
2. Spray a non-stick skillet with cooking spray and heat over medium heat.
3. Add scallops and saute 1 minute.
4. Transfer scallops to a dish.
5. Add sherry to skillet and cook 30 seconds to reduce liquid.
6. Stir in mustard and cream.
7. Return scallops to skillet.
8. Cook until scallops are heated through, about 30 seconds.
9. Season with salt& pepper to taste.

The ingredients make it sound like the dish would be great but it would be better if there were directions on the preparation. Repeating the ingredients doesn't really help.
