Sweet Potato Hash Browns

Ingredients
  • 2 cups grated sweet potatoes

  • 1/4 cup thinly sliced onion

  • 1/4 tsp salt

  • 1/2 tsp pepper

  • 2 Tbsp olive oil

Directions
  1. In a bowl, combine potatoes, onions, salt, and pepper. Separate mixture into 4 patties.

  2. In a sauté pan, heat the oil over medium-high heat, and cook potato mixture for 2 minutes on each side until golden brown

tried it..its really nice if spiced up right and yes it needs somthing to hold it together.l… i used some flour mixed out in water then added to the sweet potato…

what holds the potatoes together.. an egg..? flour.. wont it seperate when frying if there isnt something to hold it together?

I like sweet potatoes too. This sounds real good. Will have to tery it. They have a sweet potatoe pancake mix which we have tried. Couldn
t tell you what all is in it as we tried last year. Might have to look for it to see what it consists of.

Sweet potatos are so much better for me, do not drive up bg#'s like the white potato, which I now stay away from…
