Garlic and lime add a touch of zest to steak fajitas. Serve with corn tortillas for a gluten-free meal.Ingredients
1/2 Tbsp olive oil
2 Tbsp lime juice
4 cloves garlic, chopped
1/2 cup red peppers, thinly sliced
1/2 cup green peppers, thinly sliced
3/4 lb lean skirt steak, thinly sliced
8 corn tortillas
Combine 1/2 Tbsp olive oil, lime juice and garlic; mix well. Add steak to marinade, and refrigerate for 3 hours or overnight.
With a slotted spoon, remove steak from marinade.
In a small pan, heat the marinade.
Cook steak in a large sauté pan over high heat for 2 minutes (or until the meat is cooked to your desire). Add red and green pepper; cook for 2 minutes more. Add heated marinade and cook for 5 minutes.
Place steak mixture in warmed corn tortillas and serve.
