Steak Fajitas

Garlic and lime add a touch of zest to steak fajitas. Serve with corn tortillas for a gluten-free meal.

Steak Fajitas
  • 1/2 Tbsp olive oil

  • 2 Tbsp lime juice

  • 4 cloves garlic, chopped

  • 1/2 cup red peppers, thinly sliced

  • 1/2 cup green peppers, thinly sliced

  • 3/4 lb lean skirt steak, thinly sliced

  • 8 corn tortillas

  1. Combine 1/2 Tbsp olive oil, lime juice and garlic; mix well. Add steak to marinade, and refrigerate for 3 hours or overnight.

  2. With a slotted spoon, remove steak from marinade.

  3. In a small pan, heat the marinade.

  4. Cook steak in a large sauté pan over high heat for 2 minutes (or until the meat is cooked to your desire). Add red and green pepper; cook for 2 minutes more. Add heated marinade and cook for 5 minutes.

  5. Place steak mixture in warmed corn tortillas and serve.

jones25 from this step "Place steak mixture in tortillas." And if you used refried beans that will increase the carb count as well.

How does this amount to 33 grams of carbs when prepared, it begins with less than 4 carbs
