Irene's Split Pea Soup

Ingredients
  • 1 lb. split peas, sorted and rinsed

  • 2-3 quarts water

  • 2-3 chicken bouillon cubes (1 Tbls Chicken bouillon granules)

  • 1-1/2 - 2 lbs meaty ham Shank (not ham hock)

  • - or 1 lb Kielbasa or 1 lb Italian sausage, sliced

  • 1 large onion, chopped

  • ~ ~ ~ ~ ~

  • 2-3 Carrots, peeled and chopped

  • 2-3 stalks celery - or 1 stalk and the middle with all the leaves

  • 1/2-1 tsp garlic powder or 2-3 tsp chopped garlic

  • 1/2 tsp oregano

  • 1/2 tsp thyme* \ or use 1/2 tsp dried marjoram leaves

  • 1-2 bay leaves* /

  • 1/2 tsp white pepper

  • Add potato - if desired (I usually don't)

Directions
  1. Bring to boil, then simmer first 5 ingredients about 1 1/2 hours.

  2. Trim meat off bone and return to soup. Add remaining ingredients,

  3. return to boil, then simmer uncovered additional 2 to 2 1/2 hours.

  4. OR…Dump everything into a large (6 qt) crockpot and cook 8-10

  5. hours on low or 4-5 hours on high. Remove the bone and take off the meat, add the meat back into the soup.
