Herb Baked Trout
Ingredients
  • 1/4 cup fresh basil , minced

  • 1/4 cup fresh lemon juice

  • 2 tsp extra virgin olive oil

  • 4 whole trout (4 oz each)

  • 1 cooking spray

  • 1/2 tsp black pepper , freshly ground

  • 1/4 tsp salt

  • 1 medium lemon, thinly sliced

Directions
  1. Preheat oven to 350°F.

  2. Combine basil, lemon juice, and olive oil in mixing bowl. Set aside.

  3. Lightly coat 13"x 9"x 2" baking dish with cooking spray.

  4. Place trout fillets in baking dish, sprinkle with salt and pepper.

  5. Top with lemon slices, cover with one-half of basil mixture.

  6. Bake 13-15 minutes, or until fish flakes easily with fork.

  7. Spoon remaining basil mixture over fish, serve immediately

  8. Substitute 1/4 cup of your favorite fresh herb for basil
