Espresso-Crusted Steaks

  • 1 cooking spray

  • 1 tsp Coffee, espresso, prepared at restaurant , finely ground beans

  • 1 tsp unpacked light brown sugar

  • 1 tsp Seasoning, steak rub, dry mix

  • 16 oz extra lean beef tenderloin , 4 steaks trimmed 1 inch thick

  1. Heat a cooking spray coated grill pan over medium heat.

  2. Mix together espresso, brown sugar, and steak seasoning. Massage mixture onto meat on both sides.

  3. Lay steaks on pan and cook 4 minutes per side or until preferred degree of doneness

  4. Make sure not to use any flavored espressos, only use plain

I have seen this type of seasoning (coffee) used on beef on cooking shows but have yet to try it. I can't wait.
Why they say use only plain espresso's is a mystery as I have other recipes for beef with orange and pineapple and lemon flavors. Think I'll look thru all the coffee beans and see if any might be fun to experiment with. Maybe start my own show "cooking with coffee". Everyone has either a cooking , talk or judge show, why not me?
