Chicken Diane

Ingredients
  • 6 boneless skinless chicken breasts

  • 1 pinch salt and pepper (to taste)

  • 1 tbsp olive oil

  • 6 fresh green onions , chopped

  • 1 fresh lemon juice, per fruit (juice of one lemon)

  • 2 tbsp chopped parsley

  • 1 tbsp dijon mustard

  • 1/3 cup fat free reduced sodium chicken broth

Directions
  1. Place the chicken breasts between sheets of waxed paper, and pound slightly with a mallet to flatten, if desired.

  2. Sprinkle with salt and pepper. In a large skillet heat the olive oil, and cook the chicken on each side until done - about 15 minutes total. Remove chicken from the skillet, and set aside.

  3. Add the green onions, lemon juice, parsley, and mustard to the skillet. Cook, stirring constantly, for 1 minute. Whisk in the broth, and stir until smooth. Return the chicken to the pan, and serve with the sauce
