No seasonings no flavor. You gotta make it taste good. Never cook chicken breast that long it'll taste like eating tissue, maybe use a marinate and let soak 1 hour or over nite then bake 35-40 mins or tool juices run clear. I sometimes marinate chicken in zesty Italian dressing. It makes it tender and flavorful too. :)

WOW! I don't even roast a WHOLE chicken for that long! It will be dry, dry, dry! If you're not sure how long to keep it in, start at about 25 minutes, then use an instant read thermometer and when it hits 160 degrees, it's perfect. But in all honesty if you want flavor without a lot a ingredients, don't use boneless, skinless breast. Dull as eating cardboard. Use split chicken breasts, bone in, skin on. Rub with olive oil, sprinkle with S&P, garlic, whatever other spices/herbs you prefer, put on a roastint/baking sheet for 35 to 40 minutes and you won't believe the difference in flavor. The bones always make it more flavorful and just remove the skin before serving.

the only problem i see is that you cook the boneless chicken too long. there is no added liquid and i think that the chicken would be dry. instead of an hour i would check the temp at 20-25 minutes.
