Baked Pork Chops

Ingredients
  • 6 boneless pork chops , lean, center-cut, 1/2-in thick

  • 1 medium onions , thinly sliced

  • 1/2 cup medium green bell peppers , chopped

  • 1/2 cup chopped red bell peppers

  • 1/8 tsp black pepper

  • 1/4 tsp salt

  • 1 parsley sprigs (for garnish

Directions
  1. Preheat oven to 375 degrees F.

  2. Trim fat from pork chops. Place chops in a 13x9-inch baking pan.

  3. Spread onion and peppers on top of chops. Sprinkle with pepper and salt. Refrigerate for 1 hour.

  4. Cover pan and bake 30 minutes.

  5. Uncover, turn chops, and continue baking for an additional 15 minutes or until no pink remains. Garnish with fresh parsley

I have 2 kids who refuse to eat pork can I replace this with boneless chicken breast or say a thin flank steak.I have a tough crowd to please,it's a 60/20/20 split.Veggies not a problem they don't last long in the house at all.
