Teriyaki-Glazed Salmon with Peaches

Ingredients
  • 1 cooking spray, for grilling

  • 3 tbsp low sodium teriyaki sauce

  • 7 tsp fresh lime juice

  • 6 1/2 tsp honey

  • 1 lb salmon fillet , skinless, cut in 4 pieces

  • 1 1/2 cup frozen sliced peaches , thawed and chopped

  • 1/4 cup fresh cilantro , minced

Directions
  1. Prepare grill for direct cooking. Spray a grill rack with nonstick cooking spray and set aside.

  2. In a shallow dish, mix the teriyaki sauce, 2 tablespoons lime juice, and 1 1/2 tablespoons of honey.

  3. Add fish and let marinate for 5 minutes.

  4. In a small bowl, mix the peaches with the cilantro, 2 teaspoons of honey, and 1 teaspoon of lime juice. Refrigerate until ready to use.

  5. Remove fish from marinade and place on rack.

  6. Grill until fish flakes easily with a fork, about 3-5 minutes per side.

  7. Serve topped with peach mixture
