1 cooking spray, for grilling
3 tbsp low sodium teriyaki sauce
7 tsp fresh lime juice
6 1/2 tsp honey
1 lb salmon fillet , skinless, cut in 4 pieces
1 1/2 cup frozen sliced peaches , thawed and chopped
1/4 cup fresh cilantro , minced
Prepare grill for direct cooking. Spray a grill rack with nonstick cooking spray and set aside.
In a shallow dish, mix the teriyaki sauce, 2 tablespoons lime juice, and 1 1/2 tablespoons of honey.
Add fish and let marinate for 5 minutes.
In a small bowl, mix the peaches with the cilantro, 2 teaspoons of honey, and 1 teaspoon of lime juice. Refrigerate until ready to use.
Remove fish from marinade and place on rack.
Grill until fish flakes easily with a fork, about 3-5 minutes per side.
Serve topped with peach mixture
