Light Summer Pasta

Ingredients
  • Pasta

  • 8 oz cooked pasta , spaghetti, at room temperature

  • 1 lb fresh plum tomatoes , seeded and chopped

  • 3 oz fat free mozzarella cheese

  • 3 tbsp fresh basil

  • 2 tbsp chopped parsley

  • Garlic Vinaigrette

  • 3 tbsp red wine vinegar

  • 2 tbsp olive oil

  • 3 medium garlic cloves , minced

  • 1/2 tsp salt

  • 1/8 tsp black pepper

Directions
  1. Gently toss all pasta ingredients together. Drizzle vinaigrette over top.

  2. Make Garlic Vinaigrette: whisk together all dressing ingredients. Chill until ready to use.

  4. Use a variety of vegetables such as broccoli and olives.
