Corn and Zucchini Kabobs

Ingredients
  • 1 tsp fresh basil

  • 1 tsp fresh rosemary

  • 1 tsp fresh thyme

  • 1 medium garlic cloves , finely minced

  • 1 pinch black pepper

  • 1 ears of corn

  • 1 small zucchini

  • 1/2 cup fresh cherry tomatoes , 4 large cherry tomatoes

  • 1/4 Onion, red, fresh, small, whole

  • 1 cooking spray

Directions
  1. Preheat grill to medium.

  2. In small mixing bowl, combine basil, rosemary, thyme, garlic, and black pepper.

  3. Peel and slice onion into large pieces. Trim ends from zucchini. Cut corn and zucchini into 4 pieces.

  4. Place corn, tomato, zucchini, and onion - in that order - on metal skewer. Repeat until all vegetables are used.

  5. Spray vegetables on all sides with cooking spray. Season with herb mixture.

  6. Grill skewers 5 minutes on each of 4 sides.
