Macaroni and Blue Cheese Salad

Ingredients
  • 1/2 cup macaroni, uncooked

  • 3/4 cup chopped red bell peppers

  • 1/2 cup fresh cucumber, peeled and chopped

  • 1/2 cup shredded carrots

  • 1/4 cup fresh chopped green onion

  • 6 cup tap water

  • Blue Cheese Dressing

  • 1/2 cup mayonnaise

  • 1 oz blue cheese , crumbled

  • 1 tbsp red wine vinegar

  • 1 tsp celery seeds

  • 1/2 tsp salt

  • 1/8 tsp ground cayenne (red pepper)

  • 1/8 tsp black pepper

Directions
  1. Macaroni

  2. In medium saucepan, over high heat, bring water to boil. Add pasta, cook 7 minutes or until just tender. Reduce heat as necessary to prevent boil over.

  3. Drain pasta and allow to cool to room temperature.

  4. Toss macaroni, pepper, cucumber, carrots, and green onions.

  5. Blue Cheese Dressing

  6. Whisk mayonnaise, blue cheese, vinegar, celery seeds, salt, and pepper.

  7. Toss with macaroni salad. Cover and chill 30 minutes. Serve.

  8. Additional Information

  9. Be sure to cook the pasta "al dente" — just till it's soft but still chewy. This significantly lessens the impact of these carbs on your blood sugar. Better yet, try a low carb pasta product instead of regular pasta.
