Roasted Garlic and Avacado Aioli

Ingredients
  • 8 cloves garlic

  • 1 cup light mayo

  • 3/4 cups chopped avacado

  • 1 lime

  • 1 tsp olive oil

  • kosher salt to taste

  • black pepper to taste

Directions
  1. Pre-heat oven to 350

  2. Place 4 cloves of garlic in an oven safe casserole dish

  3. place a small amount of olive oil iun pan/roast cloves untillight brown 20-25 minutes

  4. Chop the rest of ther garlic and and avacado and place in blendar.Blend untilsmooth.

  5. Add mayo and mix briefly .Using a zester,scrape the lime zest into the mixture. Squeeze the line to get the juice and add to the mixture.

  6. Now the Avacado and while blending,drizzle the rest of the olive oil into mixture.

  7. Salt and pepper to taste
