2-lb. boneless pork loin roast
3 Tablespoons honey
2 Tablespoons lemon juice
1 Tablespoon soy sauce
2 cloves garlic, minced
salt & pepper
2 teaspoons cornstarch
1 Tablespoon water
Place roast into a plastic bag. Combine honey, lemon juice, soy sauce, and garlic in a 1 cup glass measure.
Microwave (high), uncovered, 30 to 45 seconds until warm. Stir to blend. Pour over roast. Close tightly and rotate roast to coat all sides. Place in refrigerator to marinate several hours or overnight, rotating roast at least once.
Remove roast from marinade; Place fat-side down in 8 inch square or round microwave safe baking dish.Pour marinade over roast. Cover with waxed paper.
Microwave (medium -50%) 12 minutes. Turn roast fat-side up. Spoon sauce over meat. Sprinkle with salt & pepper.
Microwave (medium-50%) 12 to 15 minutes or until internal temperature reaches 145 to 150 degrees. Remove roast to serving plate; cover and let stand about 10 minutes before slicing. Meanwhile, combine cornstarch and water in a 2 cup glass measure until well mixed. Stir in cooking juices.
Microwave (high), uncovered 1 to 1 1/2 minutes or until mixture boils, stirring once. Spoon glaze over roast before serving.
