Pork Roast with Honey-Lemon Glaze (Microwave)
  • 2-lb. boneless pork loin roast

  • 3 Tablespoons honey

  • 2 Tablespoons lemon juice

  • 1 Tablespoon soy sauce

  • 2 cloves garlic, minced

  • salt & pepper

  • 2 teaspoons cornstarch

  • 1 Tablespoon water

  1. Place roast into a plastic bag. Combine honey, lemon juice, soy sauce, and garlic in a 1 cup glass measure.

  2. Microwave (high), uncovered, 30 to 45 seconds until warm. Stir to blend. Pour over roast. Close tightly and rotate roast to coat all sides. Place in refrigerator to marinate several hours or overnight, rotating roast at least once.

  3. Remove roast from marinade; Place fat-side down in 8 inch square or round microwave safe baking dish.Pour marinade over roast. Cover with waxed paper.

  4. Microwave (medium -50%) 12 minutes. Turn roast fat-side up. Spoon sauce over meat. Sprinkle with salt & pepper.

  5. Microwave (medium-50%) 12 to 15 minutes or until internal temperature reaches 145 to 150 degrees. Remove roast to serving plate; cover and let stand about 10 minutes before slicing. Meanwhile, combine cornstarch and water in a 2 cup glass measure until well mixed. Stir in cooking juices.

  6. Microwave (high), uncovered 1 to 1 1/2 minutes or until mixture boils, stirring once. Spoon glaze over roast before serving.

Yes, it can be cooked in the oven. They make cooking bags for putting in roasting pans (just purchase one). Place honey, lemon juice, soy sauce, and garlic in a glass contair and microwave, or if not, on your stove till it is just warm.
Place in Bag with roast , and Then marinade in referigerator, several hours or overnight..
Remove roast from marinade, and place in a baking pan (preheated oven at 425 degrees) pour marinade over roast.. Cover with aluminium foil or roasting pan cover. Cook for about 15 minutes, spoon sauce over meat, and dd salt and pepper to taste. Place back in oven covered, for an additional 15 minutes. Check with meat thermometerfor temp to be between 145 -150. Remove and let stand covered about 10 minutes before slicing.
Meanwhile combine cornstarch and water either in microwave measure or in a small sauce pan, stir to combine and add in pan juices. Cook until mixture boils, continously stirring. Then spoon glaze over meat before stirring.

sounds good…but im not so sure about the foil for irregular ends in the microwave…lol *fireworks*

For roasts of different sizes, allow about 12 minutes per pound, turning meat over about halfway through cooking time.

If roast is irregularly shaped, cover smaller ends with foil for ist half of cooking time to prevent over cooking.
