Pesto Shrimp with Penne Pasta

Pesto Shrimp with Penne Pasta
Ingredients
  • 1 pound shrimp, raw (medium or large)

  • 8 ounces pasta, penne, whole wheat

  • 3 tablespoons pesto sauce (prepared)

  • 2 cups tomato(es), grape or cherry

  • 1/4 cup Feta Cheese, Low Fat, crumbled

  • 2 cups spinach, fresh baby, chopped

  • 1 tablespoon olive oil

Directions
  1. Boil a large pot of water and cook pasta according to directions.

  2. Shell and clean shrimp, then dry with paper towels.

  3. Place a large skillet over medium heat and add olive oil.

  4. Add shrimp in a single layer and cook for 1 -2 minutes until opaque cooked through.

  5. Reserve about a half cup of pasta water, drain the rest of the water from pasta.

  6. Add pasta, pesto, reserved water, tomatoes and spinach to skillet and stir.

  7. Top with Feta cheese and serve.

This sounds terrific, except I don't really care for the penne pasta. Do you think another pasta would work well to substitute? If so, which one? Thanks! ;-) Mara

That dish looks really yummy! and I am not familiar with some of the terms you use over in the US like buffalo wings, chicken surloin (tenderloin or whatever) now this recipe has "fresh baby" where do they come from - maternity unit at the local hospital

only 1 question. Are you using prepared pesto sauce? I made this recipe and made the pesto sauce from scratch and this is a wonderful meal. Thanks soooooo much. God bless…tommy
