1 pound shrimp, raw (medium or large)
8 ounces pasta, penne, whole wheat
3 tablespoons pesto sauce (prepared)
2 cups tomato(es), grape or cherry
1/4 cup Feta Cheese, Low Fat, crumbled
2 cups spinach, fresh baby, chopped
1 tablespoon olive oil
Boil a large pot of water and cook pasta according to directions.
Shell and clean shrimp, then dry with paper towels.
Place a large skillet over medium heat and add olive oil.
Add shrimp in a single layer and cook for 1 -2 minutes until opaque cooked through.
Reserve about a half cup of pasta water, drain the rest of the water from pasta.
Add pasta, pesto, reserved water, tomatoes and spinach to skillet and stir.
Top with Feta cheese and serve.
