Cream Cheese Crockpot Chicken

The key here is to get fat free cream cheese for this slow cooker chicken. Mix that with four other ingredients, put them in the slow cooker, and you have a delectable dinner.

Cream Cheese Crockpot Chicken
Ingredients
  • 1 1/2 pounds frozen uncooked boneless, skinless chicken breasts

  • 15 oz canned black beans, drained

  • 15 oz canned yellow corn, drained

  • 16 oz salsa Hot, medium or mild

  • 8 oz Kraft Philadelphia Brand Fat-Free Cream Cheese

Directions
  1. Put frozen chicken breasts in crockpot, cover with can of black beans, can of corn and jar of salsa. cook on high 4-5 hours or until chicken is cooked. Place block of cream cheese on top and cook for additional 1/2 hr.

tried your chicken recipe yesterday 6/5/2016 and it was very,very good. i like to cook asian dishes, like sweet and spicy garlic shrimp. when i find out all N/ Facts will post. until then keep up the good work and always " God Bless "

Wow, I don't know who suggested this recipe to me, but as soon as the turkey is gone, hey wait! Why can't I adjust the time, and use some of my leftover turkey! I think I can and I'm giong to try it. If I remember, I'll let ya's know how it turns out!

I fixed this recipe when family was visiting, also gave some to friend who had just been discharged from the hospital. Everybody LOVED it! There wasn't enough to go around. It is definitely a keeper!!

I served this when our daughter (she's also diabetic) and her family were here. It was a big hit! Even our picky eater 5 year old grandson like it.

Oh and I used 2 1/2 servings of frozen corn instead of canned to save on sodium. Also I rinsed the heck out of my black beans as always…

I tried this tonight. Was amazing!! Instead of taco seasoning due the high sodium I dusted the chicken with cumin, chili powder, garlic powder, dried onion & a tiny bit of crushed red pepper. Also I put a bit of salsa in the bottom & laid the frozen breats on it to prevent scorching. Then corn, then beans to prevent mushiness. I cooked 4 1/2 hrs on high added cream cheese and cooked another 1/2 hr. I served over chopped romaine hearts instead of rice to cut carbs and keep fiber. I let it set with the lid off 10 minutes to cool. This would also be great with a sprinkle of cilantro I just happened to be out (of course). GREAT RECIPE!!

It sounds very good. I like the fact that you can use frozen chicken. That way you don't have to worry about forgetting to thaw it. Just throw it in and go.

This sounds quick and easy. I used to do one with cream of chicken soup, cream cheese, and dry italian dressing over chicken in the crock pot. It was easy for a group or just one with left overs to freeze. I am going to try this on Friday night! Something to look forward to.

If nutritional amounts are for 6 servings, just divide those figures by 6.

For some extra zing, add a package of taco seasoning. I use the crockpot liners and shake the chicken in the bag with the seasoning to evenly coat the chicken and save on clean up!
