Oven-Baked Sweet Potato Fries

Sweet potato fries are all the rage, and baking them in your oven cuts the calories and fat you get in ordinary fries.

Oven-Baked Sweet Potato Fries
Ingredients
  • 1/2 teaspoon(s) ground cumin

  • 1/2 teaspoon(s) salt

  • 1/4 teaspoon(s) ground red pepper

  • 1 tablespoon(s) vegetable oil

  • 2 large (about 1 1/2 pounds) sweet potatoes

Directions
  1. To prepare the sweet potatoes: In a small bowl, combine cumin, salt, and pepper. Set aside. Preheat oven to 400 degrees F. Peel potatoes, cut each in half lengthwise, and cut each half into 6 wedges. In a large bowl, combine the cut potatoes, oil, and spice mixture. Toss until potatoes are evenly coated.

  2. Bake the fries: On a baking sheet, arrange potatoes in a single layer and place on the middle shelf of the oven, turning the wedges after 15 minutes. Bake until edges are crisp and potatoes are cooked through — about 30 to 40 minutes. Serve immediately

When counting carbs you count "usable" carbs, not "total" carbs. To get usable carbs you subtract dietary fiber from total carbs. So, these fries have 17.1 usable carbs, not 24.1.

I leave out the cumin and they are very good. I am allowed 30 carbs per meal so with some broiled lemon pepper chicken and a few green beans it works just fine.

i agree Degibu, thats a lot of carbs and 13 grams of sugar does not sound diabetic friendly to me, Im disappointed in this recipe, I was anxious to try them

While I agree, this sounds deeeeeelish, I'm just wondering how 24.1g of carbs qualifies as "low carb"? That's as much as I allow myself for an entire day.

I had never had sweet potato fries until last week. I was at MaidRite and gave them a try. Ummmm Yummy. Thank you for sharing this recipe.
