Chicken Vegetable Pie

Ingredients
  • 1 pkg frozen cauliflower

  • 1 (16 oz) can cooked chicken

  • 1 pkg frozen broccoli

  • 4 oz grated low-fat cheese

  • 1 small can mushroom pieces

  • 1 & 1/2 C skim milk

  • 3/4 C buttermilk baking mix ( bisquick )

  • 3 eggs

  • 1 tsp salt

  • 1/4 tsp black pepper

Directions
  1. Spray 10" pie plate with non stick spray.

  2. In pie plate mix uncooked, defrosted cauliflower, and broccoli, chicken, cheese and mushrooms.

  3. Beat all other ingredients until smooth and pour over mixture in pie plate.

  4. Bake 45 to 60 min. at 350 degrees. Serves 6

This is really good dish I didn't have any cauliflower so I used french style green beans really good

There is a Bisquick Gluten Free mix now.. definitely worth a check, Dianalyn.. I have gluten issues myself and it tastes a little different but considering what slop most GF stuff tastes like (cardboard most of it) its a great alternative, and easy to sub for the standard bisquick. :)

This looks like a great recipe. However, I do not eat Bisquick or white flour. I will need to find a gluten free substitute for the Bisquick. I also think I will use fresh cauliflower, broccoli, mushrooms, and cook my own chicken rather than use canned. I am assuming the canned and frozen items are to make this a quick dish, however, nutritionally, I think fresh is better.
