Sugar Free Bread & Butter Pickles

This is a delicious snack and a great way to use extra cucumbers from your garden.

Sugar Free Bread & Butter Pickles
  • 4 cucumbers, peeled and sliced

  • 1 onion, sliced

  • 1 tsp salt

  • 6 oz white vinegar

  • 6 oz tarragon vinegar

  • 1/2 C water

  • 1 tsp mustard seed

  • 1/2 tsp turmeric

  • 1/2 tsp celery seed

  • 4 pkgs sugar substitute

  1. In a deep dish layer the cucumbers, onion and salt. Place 4 or 5 ice cubes on top, cover with cold water. Cover with a dish and place in the fridge for 2 to 3 hours, or overnight.

  2. In a sauce pan mix 6 oz white vinegar and 6 oz tarragon vinegar, 1/2 C water, 1 tsp mustard seed, 1/2 tsp celery seed,1/2 tsp turmeric, and 4 pkgs sugar substitute. Mix well. Place over low heat and bring to a boil. Drain cucumbers,& onion mixture and add to sauce pan. ( Heat but do not bring to a boil ).

  3. Place cucumbers in clean sterlized jars and then pour the liquid over them and put a jar lid on them. Let cool then refrigerate over night before eating.

  4. Makes 1 & 1/2 quarts.

This sounds like it is simple and fun to make. I love bread and butter pickles especially Zesta ones!
