Fresh Strawberry Pie

By Trudie Ann

There’s no better way to enjoy fresh, juicy strawberries than a slice of this pie with a dollop of creamy topping.

Fresh Strawberry Pie
  • 3 pkgs. sugar substitute

  • 1 small box sugar free strawberry gelatin

  • 3 C fresh strawberries

  • 3 Tbsp cornstarch

  • 1 C hot water

  • 1 pie crust

  • 1 pkg sugar free cool-whip

  1. Mix gelatin, cornstarch, and hot water and cook 2 min. Add sugar substitue and cool. Add sliced strawberries to cooled gelatin mixture and coat.

  2. Pour into cooled 9 in. pie crust. Top with sugar free cool whip before serving.

  3. Option; You can use frozen strawberries but then it wouldn't be fresh strawberry pie. You can keep back a few slices of strawberries to place on top of pie to decorate.

This is NOT a good recipe for diabetics and those who do not want to become diabetic, period.

let us have some fresh strawberries instead!

Agree with earlier comment that nutrition info cannot be correct. My guess is that the pie crust has not been included. I actually think this might be great as just an out-of-bowl recipe. Much easier than fussing with a crust, right?

2 yrs ago I moved in with my sister and her husband, at that time they ate nuttin good for them, I as a diabetic just started to eat with them, well you know what happened then… my diabetes was out of control, so I decided to buy my food for me, fruits vegies sugar free, better for me food, well down the road they started to eat my sugar free foods, my old fuddy dud bro-in-law couldn't tell a thing, and now I have decided for myself not to eat bread, pasta or sweets, my sugar level is down, but still have ways to go…

i am gonna make this pie tomorrow but I can tell all of you that the nutritional info is way off! Running the major ingredients thru my fitness pal, it shows that each piece of pie , based on 8 slices per total pie, is 152 calories, 21 total carbs and 113 mg of sodium. I have found that many recipes do not give accurate nutritional info, PLEASE be careful!!!!! I will rate the recipe once I make it!

I make one like this with a graham cracker crust but I only use the sugar free Jello, without adding sweetener.
