Mock Potato Salad

Ingredients
  • 1 large bag frozen cauliflower

  • 4 Tbsp lite mayonnaise

  • 1 large dill pickle, chopped

  • 1 small onion, chopped

  • 2 hard boiled eggs, chopped

Directions
  1. Prepare cauliflower according to directions and let cool

  2. Cut into small pieces

  3. Combine all ingredients and chill before serving.
