Tasty Cod

Ingredients
  • 1 1/2 lbs. frozen cod

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 1 tsp tarragon

  • 1 Tbsp lemon juice

  • 1 C. chopped mushrooms

  • 1 C. thin sliced carrot

  • 1/2 C chopped celery

  • 2 Tbsp fresh chopped parsley

  • Diet margerine

Directions
  1. Place the frozen cod on a sheet of aluminum foil; lightly salt and pepper. Sprinkle with tarragon and lemon juice. Add all the veggies and the parsley. Dot with diet margarine and wrap well.

  2. Bake at 350 degrees for 35-40 min.
