Low-Fat Potato Crusted Fish

Ingredients
  • 1 lb firm white fish

  • 1/4 cup egg substitute

  • 1 tsp skim milk

  • 1/2 cup mashed potato flakes

  • 1/4 tsp black pepper

Directions
  1. Mix egg and milk together. Stir together potatoes and pepper. Dip fish in egg mixture, then potato flakes. Repeat. Place on baking sheet pan. Sprat with non-fat vegetable oil. Bake at 325 degrees until the fish flakes easily. appx. 15 minutes.

I need to learn how to use my oven and this fish recipe seems like a good place to start. Especially since my doc wants me to include more fish in my diet. Other than canned Tuna :-)

This recipe sounds very good and I am not a fish eater, but want to try fish recipes, to expand into more fish eating. I will definately try this one. It does not matter that the word potato was spelled with an "e" at the end! Anyone reading the recipe would know what it says. This is not a spelling bee or SAT test, it is someone sharing a good recipe for others who are diabetic to enjoy. Spelling criticism not welcome here.
