Gazpacho Andaluz

Ingredients
  • 2 lbs. ripe tomatoes peeled and seeded and chopped

  • 1 1/2 cup onion chopped

  • 2 cups bell pepper(any color) chopped

  • 2 cups cucumbers peeled and chopped

  • 1/3 cup extra virgin olive oil

  • 1/3 cup white wine or sherry vinegar

  • 3 cloves garlic chopped

  • 2 slices country bread crust removed

  • 1 tbsp lemon juice

  • 1/4 tsp salt

  • 2 cups ice cold water

Directions
  1. If bread is a bit stale, soak in some water to soften, then squeeze dry. Tear softened bread into large bowl.

  2. Mix all ingredients together, using hands or spatula. puree the mix in blender or processer adding the ice water as you go. Chill thoroughly and serve VERY cold.

  3. Garnish is traditional hard boiled egg or celery tops.
