Sweet Potato Casserole

Ingredients
  • 4 mediums Sweet potatoes

  • Vegetable oil cooking spray

  • 1 tablespoon Margarine

  • 1/4 cup Orange juice

  • 2 tablespoons Chopped walnuts

  • 1/4 teaspoon Nutmeg

Directions
  1. Cook whole sweet potatoes in boiling water 25 to 30 minutes or until tender. Meanwhile, lightly spray a 1-quart casserole dish with cooking spray. Remove potatoes from heat and add cold water until they are cooled slightly. Drain, peel and mash the potatoes.

  2. Add remaining ingredients and mix thoroughly. Place in casserole dish and bake, uncovered, at 375 degrees F. for 25 minutes. Serve hot. Makes 6 servings.

I have a question. Of all the recipes I've looked at for sweet potatoe casserole, they all call for orange juice. Can anybody tell me why? What does OJ do for the casserole? just wondering

Just love sweet potatoe casserole… can't wait till the holidays for them. Will try this recipe.

Skip the OJ and use Splenda Brown Sugar and slice instead of mash the potatoes. I made this one holiday. Yum
