Sweet Potato Chips

These sweet potato chips are an easy salty snack.

Sweet Potato Chips
Ingredients
  • 2 medium sweet potatoes, peeled, and

  • sliced 1/2" thick (the long way)

  • 1 tsp salt

  • Olive oil-flavored nonstick cooking spray, as needed

Directions
  1. Preheat the oven to 375 degrees. Drop the sweet potatoes into a bowl with enough cold water to cover. Add the salt and soak for 5 minutes. Dry the potatoes.

  2. Spray a baking pan with nonstick cooking spray, place the potato slices in the pan, and spray the potatoes on all sides. Bake for 20 to 25 minutes, turning once.

  3. This recipe yields 4 servings. Serving size: 1/2 potato

I use a banjo slicer (looks like a Y shape handle with the blade across the top) and make quick work of making thin slices. Place on parchment covered cookie sheets with edge of yams NOT touching. Alight shot of spray oil and pop them into the oven at 375*F. They need to be crispy so check after 10 minutes.

Maybe because when they are picked for sale in a store, they are picked early. I waited until mine were a nice size and just cleaned them up.

Wow. I was reading somewhere that they needed some time to cure or they would be almost tasteless.

I have not heard of curing them. I picked mine 2 days before Thanksgiving when we served them baked. They tasted great.

This is on for dinner tonight. I just had a great harvest of sweet potatoes from our garden, need things to do with them.
