1 cups whole blue cornmeal
1 cups flour (whole wheat pastry flour or all-purpose)
2 tablespoons sugar
1 tablespoons baking powder
1/3 cups canola oil
1/4 cups egg white or egg substitute
1 cups skim milk
Preheat oven to 375 degrees F. Lightly spray an 8x8-inch baking pan with cooking spray.
Combine dry ingredients in a medium-sized mixing bowl. Add wet ingredients and mix well.
Pour batter into prepared pan. Bake until done, about 30 minutes. Allow to cool; then cut into 12 squares. Serve warm.
Leftover cornbread should be covered and refrigerated.
