Blue Corn Bread

Ingredients
  • 1 cups whole blue cornmeal

  • 1 cups flour (whole wheat pastry flour or all-purpose)

  • 2 tablespoons sugar

  • 1 tablespoons baking powder

  • 1/3 cups canola oil

  • 1/4 cups egg white or egg substitute

  • 1 cups skim milk

Directions
  1. Preheat oven to 375 degrees F. Lightly spray an 8x8-inch baking pan with cooking spray.

  2. Combine dry ingredients in a medium-sized mixing bowl. Add wet ingredients and mix well.

  3. Pour batter into prepared pan. Bake until done, about 30 minutes. Allow to cool; then cut into 12 squares. Serve warm.

  4. Leftover cornbread should be covered and refrigerated.
