Tropical Shrimp Salad with Spicy Ginger Dressing

Ingredients
  • Dressing:

  • 1/2 c light sesame-ginger dressing (ie Newman's Own)

  • 1/4 c chopped green onion

  • 1 T fresh lime juice

  • 1 T chili garlic sauce (ie Hokan)

  • Salad:

  • Spicy Ginger Dressing (above recipe)

  • 1-1/2 lbs large shrimp, cooked, peeled, and coarsely chopped

  • 1-1/4 c coarsely chopped fresh pineapple

  • 1/2 c sliced radishes (about 5 medium)

  • Bibb lettuce leaves (optional)

Directions
  1. For Dressing: combine all ingredients. Cover and chill until ready to serve.

  2. For Salad:

  3. Prepare Spicy Ginger Dressing in a large bowl.

  4. Add shrimp; pineapple; and radishes; toss well.

  5. Drizzle with dressing and toss well.

  6. Serve shrimp salad with dressing, if desired.
