1/2 c light sesame-ginger dressing (ie Newman's Own)
1/4 c chopped green onion
1 T fresh lime juice
1 T chili garlic sauce (ie Hokan)
Spicy Ginger Dressing (above recipe)
1-1/2 lbs large shrimp, cooked, peeled, and coarsely chopped
1-1/4 c coarsely chopped fresh pineapple
1/2 c sliced radishes (about 5 medium)
Bibb lettuce leaves (optional)
For Dressing: combine all ingredients. Cover and chill until ready to serve.
Prepare Spicy Ginger Dressing in a large bowl.
Add shrimp; pineapple; and radishes; toss well.
Drizzle with dressing and toss well.
Serve shrimp salad with dressing, if desired.
