Coffee-Crusted Beef Tenderloin

Ingredients
  • 4 lbs Beef Tenderloin Roast

  • Whole Coffee Beans, Finely Ground

  • 1/4 Cup Splenda Brown Sugar Blend

  • 2 TBSP Ea. Chili Powder, Paprika, Ground Sage

  • 1 TBSP Onion Powder

  • 1 TSP Cayenne Pepper

Directions
  1. Preheat oven to 450 degrees. Trim fat and tough gray membrane from roast. Fold over thin end of tenderloin; using kitchen twine, tie roast - knotting every inch or so.

  2. Combine dry ingredients and rub half over roast. Let meat rest 15 minutes and then rub with remaining mixture. Place meat in roasting pan. Turn heat down to 400 degrees and roast without basting on center rack until meat thermometer reads 130 degrees for rare or 145 degrees for medium.

  3. Remove roast to cutting board and let rest for 10 minutes. Slice into 1/4" slices, serve immediately
