Eggplant Roll-Ups

Ingredients
  • 2 cups tomato sauce (spaghetti sauce is perfect)

  • 1 cup crumbled feta

  • 2 large eggplant (about 2.5 lbs)

  • Black Pepper

Directions
  1. Slice eggplant into 1/4-1/2 inches slices (you should have 8 regular slices and 4 irregular smaller slices from the edges), and sprinkle with pepper.

  2. Bake in 350degrees oven for 10-15 minutes on each side, or grill until soft enough to roll.

  3. Spread half tomato sauce on eggplant pieces and sprinkle with crumbled feta. Roll each piece of eggplant, place in a baking dish in one layer, spread the rest of tomato sauce in the top and bake in the 350 oven for 15 minutes.

  4. Serve hot or room temperature.

Thanks so much, I love stuffed eggplant and I always wondered how they rolled. It. I will add cottage cheese instead of feta. I love feta but hubby doesn't. Thanks again :)!

OH! I am excited about this one. My garden is producing the most beautiful purple eggplants and this is a wonderful idea in how to use them.

One step I add is once you slice your eggplant, soak it in salt water for about 2-5 minutes first. It will take out the bitterness of the eggplant and you may find your family likes it better.
