Coconut Pie

With only 6 ingredients and a few simple steps, this easy-breezy recipe delivers a delicious coconut pie without all the fuss.

Coconut Pie
Ingredients
  • 1 lrg box of Jello Sugar Free French Vanilla Pudding and Pie Mix

  • 1 regular size container of Sugar Free Cool Whip

  • 1 1/2 cups of Fat Free Skim Milk

  • 1 Cup Fresh Coconut

  • 1 graham cracker crust

  • 1/2 cup of sweetened coconut toasted

Directions
  1. Pour pudding mix into a large bowl

  2. Pour milk into pudding mix and well with a wire wisk or electric mixer

  3. Fold in Cool whip

  4. Fold in Coconut

  5. Pour mixture into the pie shell

  6. Let pie sit in refrigerator for at least 2 hours to set up

  7. Top pie with toasted coconut

mine turned out pretty good but I don't like instant pudding so I used the fat free sugar free cooked pudding let it cool somewhat then put in the cool whip and coconut came ot really well .also the carbs are good my doc gives me 31 carbs a meal so this can be counted in as a snack witch I am allowed 30 grams

I made this pie for my father-in-laws birthday. I always try to make something different and he has been into coconut pies lately, so I thought I would give this a try. Everyone loved it. Mine looked like the picture. I made a few changes, I used 2% milk instead and put in 1 tsp of coconut extract in with the milk and pudding. It stayed together and came out fluffy and very creamy. Would have like to have make a more healthy crust using almond flour, still learning how to use it. Great recipe. Will definitely make it again. Thanks for sharing it.
