Coconut Pie

With only 6 ingredients and a few simple steps, this easy-breezy recipe delivers a delicious coconut pie without all the fuss.

Coconut Pie
Ingredients
  • 1 lrg box of Jello Sugar Free French Vanilla Pudding and Pie Mix

  • 1 regular size container of Sugar Free Cool Whip

  • 1 1/2 cups of Fat Free Skim Milk

  • 1 Cup Fresh Coconut

  • 1 graham cracker crust

  • 1/2 cup of sweetened coconut toasted

Directions
  1. Pour pudding mix into a large bowl

  2. Pour milk into pudding mix and well with a wire wisk or electric mixer

  3. Fold in Cool whip

  4. Fold in Coconut

  5. Pour mixture into the pie shell

  6. Let pie sit in refrigerator for at least 2 hours to set up

  7. Top pie with toasted coconut

I made this pie for my father-in-laws birthday. I always try to make something different and he has been into coconut pies lately, so I thought I would give this a try. Everyone loved it. Mine looked like the picture. I made a few changes, I used 2% milk instead and put in 1 tsp of coconut extract in with the milk and pudding. It stayed together and came out fluffy and very creamy. Would have like to have make a more healthy crust using almond flour, still learning how to use it. Great recipe. Will definitely make it again. Thanks for sharing it.

Unfortunately, their photographs are not of the actual recipe. They just used a stock picture of a coconut pie. It is misleading, and serves no good purpose, but they refuse to stop it.

The picture is misleading because it is not a graham cracker crust. Also, the depth of the pie pictured makes it clear that it is not in a typical store bought crust. I used this receipe as written and it tastes ok but it is not as solid as it should be. I wonder if it should have been instant pudding as opposed to the kind that you cook because the receipe doesn't have you cook the pudding. When I sliced the pie, it was not as solid as it appears in the picture above. It wasn't runny either, just in between. It had been refrigerated for over a day.

Yuck, don't make this with Silk PureAlmond. I tried it and it was horrible, through the pie in the trash. Next time I will try with low fat milk like recommended.

I am going to try this with a little tweeking and use unsweetened coconut instead and instead of a cracker crust make a ground almond nut crust. That should cut calories and sugar. Thank you
