Coconut Pie

With only 6 ingredients and a few simple steps, this easy-breezy recipe delivers a delicious coconut pie without all the fuss.

Coconut Pie
Ingredients
  • 1 lrg box of Jello Sugar Free French Vanilla Pudding and Pie Mix

  • 1 regular size container of Sugar Free Cool Whip

  • 1 1/2 cups of Fat Free Skim Milk

  • 1 Cup Fresh Coconut

  • 1 graham cracker crust

  • 1/2 cup of sweetened coconut toasted

Directions
  1. Pour pudding mix into a large bowl

  2. Pour milk into pudding mix and well with a wire wisk or electric mixer

  3. Fold in Cool whip

  4. Fold in Coconut

  5. Pour mixture into the pie shell

  6. Let pie sit in refrigerator for at least 2 hours to set up

  7. Top pie with toasted coconut

The overall carb content in this recipe could be reduced by substituting real whipped cream (sweetened with Splenda or your choice of sweetener) for the Cool Whip and a crust made of almond flour instead of the graham crackers. I would also substitute the 1/2 cup of sweetened coconut with toasted unsweetened coconut as the topping or maybe toasted chopped nuts. I would list the revised ingredients in www.recipenutrition.com to arrive at more diabetes-friendly nutritional values.

This simply is NOT a "sugar-free" food at all. Milk has lactose or milk sugar in it and the lactose cannot be separated. So 1.5 cups fat free milk still has 18 grams of sugar. The "1/2 cup sweetened coconut" has 20 grams of sugar. The "1 cup Fresh coconut" has 17 grams sugar. The "1 graham cracker crust" has 33 grams sugar. So that adds up to 88 grams of sugar PLUS the 325 "corn syrup" calories in the cool whip junk which is NOT sugar free because corn syrup is NEVER sugar free. The 15 calories per serving (of 25) is sugar and fat as described in the ingredient list which adds close to another 80 grams of sugar in the form of the corn syrup the 2nd ingredient in Cool Whip. 88 + 80 = 168/8 servings = 21 sugar grams in this recipe per serving. Never, ever think Cool Whip or any product similar is "sugar-free" when "corn syrup" is the first ingredient after "water".

mine turned out pretty good but I don't like instant pudding so I used the fat free sugar free cooked pudding let it cool somewhat then put in the cool whip and coconut came ot really well .also the carbs are good my doc gives me 31 carbs a meal so this can be counted in as a snack witch I am allowed 30 grams
