1 medium head cauliflower, cut into florets.
1/4 cup olive oil
1/2 cup pitted green olives, chopped
Salt and ground pepper
Toss first three ingredients in a shallow roasting pan large enough to hold cauliflower in a single layer. Season with salt and pepper to taste.
Bake, stirring occasionally, until browned and tender, about 15 minutes.
