All-American Meat Loaf

Ingredients
  • 2 cups shredded cabbage

  • 1 cup chopped onion

  • 1 cup shredded carrots

  • 1/2 cup chopped green pepper

  • 2 cloves minced garlic

  • 1 cup brown rice or barley

  • 1 t. dried basil

  • 1/2 tsp dried savory

  • 1/4 tsp thyme

  • 1 pound extra-lean ground beef

  • 3 egg whites, lightly beaten

  • 3/4 tsp salt

  • 1/4 tsp ground black pepper

Directions
  1. Preheat oven to 350 degrees. Coat an 81/2" x 41/2" no-stick loaf pan with no-stick spray.

  2. Coat a large no-stick skillet with no-stick spray and warm over medium-high heat. Add the cabbage, onions, carrots, green peppers, and garlic. Cover and cook, stirring occasionally, for 8 to 10 minutes, or until carrots are tender. Stir in rice or barley, basil, savory, and thyme. Let stand for 5 to 10 minutes or until cool.

  3. Add the beef, egg whites, salt and black pepper. Mix with your HANDS to combine. Pack the mixture into the prepared loaf pan.

  4. Bake for about 1 hour, or until the juices run clear. Remove from the oven and to cool for 5 minutes.

  5. Turn out of pan onto platter and slice.
