Mock Whipped Cream

Ingredients
  • 1 teaspoon gelatin

  • 2 teaspoons cold water

  • 3 Tablespoons boiling water

  • 1/2 cup ice water

  • 1/2 cup non-fat dry milk

  • 3 Tablespoons sugar

  • 3 Tablespoons vegetable oil

Directions
  1. Chill a small mixing bowl.

  2. In another small bowl, soften gelatin with cold water. Add boiling water, stirring constantly until gelatin is completely dissolved. Cool until tepid.

  3. Place ice water and non-fat dry milk in chilled mixing bowl. Beat at high speed of electric mixer until stiff peaks form. Continue beating and add sugar oil, and gelatin.

  4. Place in freezer for approximately 15 minutes, then transfer to refrigerator until ready to use. Stir before using to retain creamy texture.

  5. Makes 2 cups. Nutrition is for 1 Tablespoon serving.
