Sugar Free Cranberry Salad

Ingredients
  • 1 pkg. fresh cranberries

  • 2 Cups water

  • 1cup equivalent of Splenda, or any other sweetner

  • 2 small boxes of sugar-free red jello

  • 2cups water

  • 2 cups diced celery

  • 1 large can (15oz) pinneapple in own juice

  • 1 cup chopped walnuts

Directions
  1. Bring cranberries to a boil in 2 cups of water. Remove from heat when berries have popped open. Add sweetner and set aside to cool.

  2. Dissolve 2 small boxes or 1 large box of red gelatin in 2 cups of boiling water. Add cranberry mixture and stir. Add celery, pineapple, and walnuts. Pour into pan, bowl, or mold and refrigerate until set.

This is exactly the way I make sugar free cranberry salad. Sometimes I chop up a crisp apple like Granny Smith and add it as well. This is a good recipe!!
