3 lbs. green tomatoes (8 to 10 tomatoes) cored and quartered
1 green pepper, seede and quartered
2 medium apples-peeled cored and quartered
1 small onion, quartered
1/2 t. cinnamon
1/2 t. ginger
1/4 t. salt
1/4 t. allspice
1/8 t. red pepper
1 cup brown sugar
2/3 cup cider vinegar
1/2 cup raisins
Use food processor to chop tomatoes, onions, pepper, apples, and onion, processing about 1/2 a container of fruits or vegetables at a time. Transfer to a 3 quart microwave safe casserole. Cover with casserole lid.
Microwave (high) 13 to 15 minutes or until hot and bubbly, stirring once. Stir in cinnamon, ginger, salt, allspice, pepper, brown sugar, vinegar and raisins.
Microwave (high) uncovered 45 to 50 minutes or until mixture is thickened, stirring 2 to 3 times. Ladle into sterilized jars and seal, or cool and spoon into freezer containers for freezing.
Makes about 6 cups.
